You never know what you're going to learn at an ICC meeting, especially when you sit next to Mary Palsma! More than a year ago, we were chatting at a luncheon, and started talking about recipes. Mary said, "Have you ever made Apple Pie in a Brown Bag?" Of course I was intrigued and asked for the recipe, which she shared right away. Then it took several months for me to actually make this pie. I couldn't believe you just put it in a brown paper grocery bag and bake it -- just as is! I tried it out on Christmas Eve 2009, and we were so amazed that I made it again soon after. Now it's the only apple pie I make. At this time of year it's not fun to have the oven on for an hour, so I won't be making it again until fall and cooler weather. But I can hardly wait! Hope you like it, too.
Apple Pie in a Brown Bag
Put a single unbaked crust in pie plate. (Make your own, or use a ready-made.)
Slice enough apples to fill pie shell (5 Granny Smith's will do the job).
Mix apples with 1/2 cup sugar, 2 Tablespoons flour, and 1/2 Tablespoon cinnamon (Splenda works well for sugar, or for at least half of it).
After putting the above in the pie shell, combine 1/2 cup sugar, 1/2 cup softened butter, and 1/2 cup flour. Mix until crumbly, use fingers to scatter over the top of the apples. (Don't worry if it doesn't cover every space, because when it is in the oven, it spreads out.)
Slide pie into brown paper sack; fold end over twice and staple.
Bake at 400 degrees for ONE HOUR.
